I’m busy today blending up some spices to make a batch of Chai Tea for Here Today Emporium in Wilton, NH. I tend to only have the chai in stock at the request of the store owner, along with some soaps here and there. Here Today Emporium is the kind of store that you love to visit and browse for about 2 hours. It’s a collection of tiny rooms filled with treasures of all kinds. If any one item was to be lined up in a row, the whole feel of the place would change. I love that she has three or four specially curated items of mine and that’s it. You get a sense of how special those items are. Some of the love of the creator remains.
My Chai is a lovely blend of China Black Tea, Assam Tea, Cinnamon, Cardamom Seed, Cloves, Ginger Root and Black Pepper. You should smell it! I love to prepare it with mostly hot water but more milk than I usually would. Others prefer it with all milk and everywhere in between. I just tell folks to use it as a latte, and they get to choose the amount of tea to put in. If you brew it with water and then add to the hot milk, you can brew it more than once, but I don’t think it works as well brewed with all milk and then used a second time. It works, but not as well, in my opinion. Also you should only try that immediately afterward drinking the first cup, I don’t recommend dairy out of the fridge for too long. Coconut milk works well, but other nut milks don’t have the fat levels for optimum brew. That’s not saying you can’t use them, though. Each to their own.
